Meet one of our Assistant Banquet Managers and amazing servers, Mindy Blackman!

Gables: Where did you grow up?

Mindy: I basically grew up in this area, but I’ve lived from one side of the United States to the other. I’ve lived out here for over 40 years, so this is home. As much as I complain about the
winters here, I’ll probably never move. It’s a beautiful area, and it’s home.

Gables: What do you like to do in your free time?

Mindy: I love to walk around Longwood Gardens. It’s my way of de-stressing from the weekend. I walk with my father every week, and sometimes, my brother or my daughter will join us.

Gables: What is one book you have read that you think everyone should read?

Mindy: What Dreams May Come is one of my favorites. I love the way the author looks at life and life after death. I would like to think that it’s based on some truth.


Gables: What do you like the most about being a server? What is one thing you would change about it?

Mindy: I like to interact with people, and also I like staying busy. I could never survive a desk job. I would weigh a million pounds! I hate working every holiday and weekend. It doesn’t bother me as much now as when my kids were little. I’ve been a single mom for most of their lives, and it would have been nice to actually have Thanksgiving dinner ON Thanksgiving. I guess you do what you gotta do, though, and my kids turned out pretty good. I’m very lucky.


Gables: What is your favorite thing to eat?

Mindy: I love food. I don’t really have a favorite.

Gables: What is your favorite wine?

Mindy: Camus cabernet is one of my favorites.


Gables: What’s your favorite comfort food?

Mindy: Probably spaghetti with meatballs, but it has to be angel hair pasta.


Gables: If you could only eat one thing for the rest of your life, what would it be?

Mindy: Bacon and sour cream, not together, of course. In a perfect world, they would both be healthy foods!! I really could eat them every day!


Gables: If you could have your own business, what would it be?

Mindy: I did have my own diner for a couple of years, but it’s much easier working for someone else! If I could, though, I would have something to do with flowers and plants. Maybe art also, maybe incorporate the two.


Gables: What is one of the most important things you learned in school?

Mindy: School? Hmm, that was a lifetime ago, too long to remember!! Probably how to get along with people, not so much any course. Maybe that’s why I’m doing this for a living!



Gables: If you were a superhero, what would your name and powers be?

Mindy: Superhero? Hmm, I would love to fly and maybe read people’s minds. That would be fun. As for my name? Mindy the Magnificent !!

“I do love my adult coloring book, with stress-relieving patterns. Sophia and I will sit at the kitchen table at the end of the day and color together while listening to music. It’s a great way to spend some time together while winding down from a long day.

“Some of my favorite times are Sunday dinner at my husband’s family’s house,” she said. “We make this big thing of sangria using good frozen peaches, and then have the peaches at dessert. We live in the South, so it’s warm a good part of the year, and that makes for a perfect day.”


Not surprisingly, Cathy said that if she wasn’t doing restaurant marketing, she’d be in the kitchen as a pastry chef. As a kid, she baked when she was bored — including her own birthday cakes. She’d considered being a vet at one point, but when the family dog needed an operation, she realized she couldn’t see herself in that role. Luckily for us, she went into the restaurant industry, and then into the family business. It just wouldn’t be the same without her!
