Cooking with the Chef: Garden Pesto

Our rooftop garden is in full swing, and Chef is cooking up a storm with our just-picked produce. And while The Gables at Chadds Ford is known for Southern-inspired fare, we’re also dazzled by foods from around the globe.

One of Chef’s favorite go-tos is flavorful pesto. Fistfuls of fragrant herbs kissed with a few surprises—no garlic, just a hint of chives!—mean big, bright and savory flavors. Basil’s heady pepper-meets-mint aromatics still take center stage with slightly sweet yet acidic white balsamic vinegar and a few other key players, but we think your Italian Nonna will approve of this recipe.

Think outside the pasta! Pesto isn’t only great on pastas; it also adds panache to dips, salads and veggies, flatbreads and pizzas, and of course, as part of a great bruschetta. Experiment and you’ll find versatile pesto will earn a place on your must-have list—just like Chef.



  1. 1½ cups packed basil

  2. ¼ cup packed oregano

  3. ¼ cup chives

  4. ½ cup curly parsley

  5. 1 Tablespoon white balsamic vinegar

  6. 1 teaspoon fresh lemon juice

  7. ½ cup EVOO

  8. 2 teaspoons coriander

  9. Salt and pepper to taste


  1. Add all the herbs into a food processor and pulse until coarsely chopped.

  2. Add in the vinegar and lemon juice to mix.

  3. Slowly drizzle in the oil.

  4. Season to taste.
