Homegrown: The Gables Serves Local, Farm-Fresh Food Along With Friendly Hospitality

What do you think of when you hear about hospitality? A relaxing, slower pace? Smiling faces? Fresh food?


We think of all of that and more, and are proud of the relationships we have with local farms, creameries, mills, mushroom purveyors and more — not to mention our own rooftop garden! We combine Pennsylvania microgreens, veggies, honey, cheeses and more with meticulously sourced seafood, poultry, beef and pork to fulfill the vision our owner Ann Kolenick had when she took over The Gables at Chadds Ford in 2011.

  1. Birchrun Hills Farm in Chester Springs for blue cheese, goat cheese and sharp cheddar.

  2. MyGreens Microgreen Farm in Chadds Ford for micro basil, micro rainbow mix and micro cilantro.

  3. SIW Farms in Chadds Ford for honey and homemade ketchup

  4. Phillips Mushrooms in Kennett Square for shiitake, crimini, oyster, portobello and white button mushrooms.

  5. The Farm at Doe Run in Coatesville for cheeses and meats.

  6. Lamont Coffee Co., in West Chester for coffee, tea and iced tea.

  7. Castle Valley Mill in Doylestown for grits.

  8. Hy-Point Dairy Farms in Wilmington, Del. for milk, heavy cream, half and half, buttermilk and eggs.

  9. Woodside Farm Creamery in Hockessin, Del. for ice cream and sorbet.

  10. FarmArt Produce in Folcroft and J. Ambrogi Foods in Depford, N.J. for local produce, including tomatoes, Brussels sprouts, peppers and all our fruit.

So what’s The Gables’ Hospitality, then? It’s an attitude and a graciousness among the staff which relishes providing a family atmosphere so customers feel at home. And, like part of the fam.

“To me, it’s really taking care of people, welcoming them in as a part of the family,” Ann explained. “We get a lot of feedback that our customers feel that and love that. One of my main goals was to make sure our staff is one, big crazy family. People come back because they feel part of it, too.”

“Some of our most popular dishes are veggie-centric, like balsamic Brussles sprouts, avocado crostini, any number of items with Kennett Square mushrooms, our Gables salad, and pappardelle Gables,” Ann said. “Still, our menu straddles a full range of cuisine from burgers to filet, with favorites such as crab and artichoke dip, The Gables burger, shrimp and grits, and grilled chicken breast. Food is to enjoy, and our customers love that they can choose casual or fine dining and still feel comfortable.”

As you look around The Gables, you’ll see small, charming touches indoors and out. In warmer weather months, and as the pandemic restrictions eased, the outdoor seating options, in particular, have been a respite for customers who missed being at their home away from home. Get there early to snag a seat in an Adirondack chair made by Ann’s father!

“We’ve cultivated an ambiance that’s warm and inviting with stone, landscaping and flowers, and antiques,” she said. “That vibe carries through to our event space and bridal suite, too.”

As for that big, crazy family of staffers? Ann says hiring the right people is the first step, then consistent training. She says customers love it that servers and bartenders remember what they like to eat and drink, which makes them feel good. It’s the whole experience that makes it a hospitable spot. And, isn’t that what it’s all about?
