Yes, that’s right — dessert! Sure, we could show off any number of dishes that are perfect for your New Year’s Eve or any other time of year. Instead, we’re highlighting a sweet treat that’s also a nod to our Southern roots.
According to Southern Living, recipes for milk- and custard-based pecan pies hearken back to as early as 1824 in Mary Randolph’s The Virginia Housewife, and the syrup-based confection got a nod in the 1921 Texas Brownwood Bulletin. But it was actually a recipe on Karo Syrup bottles circa the 1930s that shot the pie we know and love into popularity. It quickly became one of the most popular desserts among Southerners, and its identity has shifted to a Southern classic.
We dig classic recipes, but made our pie that much better by adding another Southern favorite: bourbon. Our pie boasts the right amount of sweet without being too rich, plus an irresistible crunch from mildly nutty pecans and a tender, buttery shortbread crust. We serve it with vanilla ice cream drizzled with bourbon-spiked caramel sauce. What’s not to like?
In a nod to the traditional New Year’s toast, our chef suggests you pair it with a glass of bubbly. Choose your favorite — Prosecco or a nice blanc de blancs. Prosecco hails from Italy and is generally more fruit-forward. You’ll find notes of hazelnut, honey and even vanilla. True Champagne comes from that region in France (which is why other bubblies are deemed sparkling wine — and those work, too!). It has notes of citrus, peach, almond and sometimes has a hint of toastiness. Blanc de blancs is made from 100 percent white grapes for a bright, fresh finish. Whatever your pick, the sparkling wine’s flavor profiles complement dessert, while the bubbles act to cleanse the palate as you enjoy every last bite.
